RECIPE: 5 Cup Sultana Loaf

Ok, what is up with the price of butter these days?! I legit saw butter on special the other day... for $5.00 NZD. I just can't comprehend that. It's ridiculous!

Because of this, I've started seeking out good recipes that don't call for butter. And this 5 Cup Sultana Loaf is DAMN good. So I figured you guys might like to give it a go too.


I found this recipe on the Simple Savings forum a very long time ago and rediscovered it in my "recipes to try" folder so I'm not entirely sure who the original recipe belongs to - but I would like to say a HUGE thank you. This is incredible.

5 Cup Sultana Loaf


Ingredients:

  • 1 cup self raising flour

  • 1 cup coconut

  • 1 cup soft brown sugar

  • 1 cup milk

  • 1 cup sultanas

Mix all the ingredients together until just combined, pour into a lined and greased loaf tin and bake at 180℃ for 30-35 minutes or until it springs back when touched.

I make this in a gas oven (off grid, remember?!) so sometimes this takes a bit longer to cook, but pretty much as soon as it springs back when touched I pull it out of the oven.

Ricky is so obsessed with this and claims it's the best sultana cake he's ever had. Which I'm happy about, since it's so ridiculously easy to make.

Personally I'm not a huge fan of sultanas, so I'll often swap them out for a cup of chocolate chips and add a tablespoon of cocoa. Instant chocolate coconut loaf - delicious!
