Fit Friday: Cheat meals and Paleo KFC Recipe

I'm so sorry this post is going up late, my internet connection has been all kinds of annoying and wouldn't stay connected long enough for me to post anything - but better late than never right??

I cannot stress the importance of cheat meals when you're eating healthy. I'm sure there are some people out there who can eat 100% healthy and never crave unhealthy food - but I am not one of them. I love cheat meals, I look forward to them every week! And with WW, I can pretty much choose whatever I want. I could have McDonald's, Burger King, even KFC - but because I prefer to eat food that I prepare myself, I usually do my own version of "takeaways".

This week I wanted to share one of my favourite recipes, Paleo-Friendly KFC Chicken. Not only is this suitable for anyone following the Paleo Diet, but it's also extremely tasty. And now, I've made it even healthier by cooking it on the George Foreman Grill.

Paleo KFC Recipe




Ingredients:

  • Coconut Oil (I used about 1/4 cup)

  • 2 large Eggs

  • 1 cup Almond Flour (if you're having trouble finding this, head to Bin Inn)

  • 1 tsp Paprika

  • 1 tsp Garlic Powder

  • 1/2 tsp Salt

  • 1/2 tsp Black Pepper

  • 1/2 tsp Dried Thyme

  • 1 tsp Chilli Powder (optional, I didn't add this to mine)

  • 900g Chicken (I used tenderloins, to make my version of Crispy Chicken Strips)




Preheat the grill, and add some Coconut Oil to it.

Combine the dry ingredients in a bowl and mix well.



Whisk eggs in a bowl. I decided to use this double sided container instead, which made less of a mess!



Dip the chicken in the whisked eggs.



Roll in the dry mixture.



Place the chicken on the George Foreman Grill and cook until they are golden brown.



Serve with your choice of sides, a salad would go great with these! They'd also be awesome on a wrap... but I'll admit, I eat them on their own. Or with a "healthier" version of potato and gravy, hahaha.

Alternatively, you can actually use thighs, drumsticks or breasts, fry them in a pan until golden brown and then place in an oven preheated to 200℃ for 10 minutes to cook through. Using the grill is way easier though!
